  • 3 cloves garlic, minced
  • 1 1/4 cups jasmine rice, rinsed
  • 2 1/4 cups chicken or vegetable broth
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 cup frozen peas
  • 3 scallions, sliced
  • 1 teaspoon toasted sesame oil
Method

Cook in stages, then bring it together.

  1. Season salmon with salt and pepper.
  2. Heat oil in a deep skillet over medium heat. Cook onion for 4 minutes until softened, then stir in ginger and garlic for 30 seconds.
  3. Add rice and stir for 1 minute. Pour in broth, soy sauce, and honey. Bring to a simmer.
  4. Nestle salmon pieces on top of the rice. Cover, reduce heat to low, and cook for 16 to 18 minutes until rice is tender and salmon flakes easily.
  5. Scatter peas over the skillet for the final 3 minutes of cooking.
  6. Finish with scallions and sesame oil before serving.
