Why it works

Why this pan earns a repeat spot.

Ingredients

What to pull from the fridge and pantry.

This recipe is written to be direct and forgiving. Read through once, then set ingredients near the stove so the pan can move smoothly.

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 scallions, minced
  • 1 tablespoon red curry paste
  • 1 teaspoon kosher salt, divided
  • 2 tablespoons olive oil
  • 1 can light coconut milk
  • 1/2 cup chicken broth
  • 8 ounces green beans, trimmed
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Cilantro and lime wedges for serving
Method

Cook in stages, then bring it together.

  1. Mix turkey, breadcrumbs, egg, scallions, curry paste, and 1/2 teaspoon salt. Form into small meatballs.
  2. Heat oil in a large skillet over medium heat. Brown meatballs for 6 to 8 minutes, turning until nearly cooked through.
  3. Pour in coconut milk and broth. Add remaining salt and bring to a simmer.
  4. Add green beans, cover, and cook 5 to 6 minutes until crisp-tender and meatballs are cooked through.
  5. Stir in lime juice and honey.
  6. Top with cilantro and serve with lime wedges.
Notes

Helpful tweaks for busy nights.

  • You can swap green beans for thin broccoli florets.
  • Serve over microwave rice if you need to stretch the meal further.
  • Use full-fat coconut milk for a richer sauce.
From Maya

Cooking for a real weeknight matters.

I write these dinners for the stretch of the day when everyone is ready to eat and the kitchen still has to stay manageable. If you make this recipe, pair it with what your family already likes and let the pan do most of the work.
